Another Jamaica Day in the Garden

Raise your glass to another day of Jamaica, turn the YouTube on and play a little island music. Maybe I should say raise the Red Stripe, if you're a beer fan as my husband is.

Yesterday we had a recipe for Meat Patties, today:

Jamaican Curried Goat (or lamb)
2 tbsp. cooking oil
1 lb. boneless goat mutton or lamb, cut in 1" cubes
2 large onions, peeled and finel sliced
2 tsp. allspice (ground)
2 cups stock, consomme or bouillon
1 tbsp. wine vinegar
1 tsp. curry powder (or more to taste)
salt to taste
pinch cayenne pepper
1/4 bayleaf
2 dashes Tabasco sauce
Boiled Rice

Brown meat quickly in oil. Remove then cook onion in oil until soft but not brown. Stir in curry powder and allspice. Cook stirring for a few moments, then stir in stock, vinegar, salt and cayenne. Return meat to pan and simmer slowly for 2 hours. Add bayleaf about 30 minutes before it's done. Just before serving, stir in Tabasco sauce and serve surrounded by rice (Serves 4)

This is a bit spicy so I recommend a light sweet wine. Maybe a blush or a moscato would be a nice change.

And I bet it would taste just as good or even better reheated the next day. Which I what I do? Dinner for work.

I've found that most spicy foods are better the next day.

I think that's because the spices have more time to marinate into the meat.

Don't have a recipe, but I remembe salt fish and akee being big when I was in Jamaica.

(Not with me. Not much for cod.)

That and Red Stripe, of course. And Tia Maria. And 150 proof rum.

Thanks Taryn the video worked for me. And I loved Ackee and Saltfish. We went on a bus ride, my husband and I were the only ones on the bus, and our driver was Jackie. He stopped and showed us an Ackee tree and explained that the nut was poison so to be careful.

I should tell that story and post some pictures on Monday. It is awesome and oh, I will...

Lindsay it may look awful, but it's GREAT. I've already told my husband I'm telling the Jamaica story complete with pictures on Monday and maybe more recipes.

Now I have to find the pictures. Wait until you see the storm.
