Creamy Ham and Potato Bake

Creamy Ham and Potatoes 8 servings
10 Medium Red Potatoes sliced
1 cup ham cubed
1 bunch green onions chopped
2 10.5 oz cans Cream of Mushroom Soup
1/2 cup 2% Milk
4 brown mushrooms sliced
2 cloves garlic chopped
1 Jalapeno chopped (seeded)
1/4 cup onion chopped
1/2 cup shredded low fat Mexican mix cheese
1/2 tsp ground pepper
1/4 tsp sea salt
1 tsp basil
1 tsp summer savory

Put 1/4 cup shredded cheese aside. Mix everything else together in bowl. Then spread it into a pan (spray pan with oil). Bake on 425 for 30 minutes and turn down to 375 for 20 minutes.

Per Serving, Approx. 365 Calories, 11g Total fat, 3g saturated fat, 33mg cholesterol, 1011mg sodium, 52g total carbohydrate, 4g dietary fiber, 4g sugars, 16g protein. Vit. A 3%, Vit C 79%, Calcium 13% and Iron 12%

I served this with Sunflower Honey bread, steamed cauliflower and red wine.
