Mary's News and Notes
Is it just me or does every year seem to fly by faster and faster? I have had a fun time since my last newsletter. We stayed in Cedar City, Utah for a weekend of water polo. We watched our grandson's team Cyprus Pirates in the 2024 Summer games, though it did snow.
My granddaughter started her softball season. And also her barrel racing, though we have yet to watch her, but we will.
I had a fabulous time at a book signing yesterday at Marissa's Books and Gifts.

Brenda Novak
I have been friends with Brenda since I met her at a Utah Romance Writers of America conference in Utah. I think it was 2010. I visited her with my friend Judy Baker for a champagne brunch. We had the best time. It included wine tasting, among other things. I met some wonderful new friends that I still keep in touch with. If you have the chance, join her on one of her many adventures.

I read this book when we were on our way to Cedar City, I loved it. The characters came to life. There were some suspenseful twists, I love romantic suspense. I highly recommend it!

Southwestern Chicken and Rice bowl - Serves 2

Fast and Easy
8 oz. Thin cut chicken breasts cut into cubes.
1 can Roasted Organic Tomatoes
1/4 cp. Onion chopped.
1 Jalapeno sliced (optional)
1 Red sweet pepper sliced
1 cup Jasmine raw rice
8 tbsp. Flame Roasted Green Chile
1/2 cp. Frozen corn
1 tbsp Garlic olive oil
In a large skillet or frying pan add the oil to the pan and heat on medium. Then add chicken, onions, and peppers. Once meat is cook, onions and peppers are tender add tomatoes. Bring the juices to a boil, add the long cooking rice. Add corn, turn to low and simmer 20 minutes stirring occasionally to make sure rice doesn't stick.
