Chicken and Potato Bake for 2
Chicken & Potato Bake for 2
2 Chicken Breasts
3 Medium Red potatoes sliced thin
1 tsp Basil
1/4 tsp Pepper
1/8 tsp sea salt
1/4 tsp Rosemary
1/4 tsp dill
1/4 tsp sage
1/4 tsp thyme
1 tsp summer savory
1/8 tsp coriander seed
1 clove shallot chopped
2 cloves garlic (in garlic press if possible) or chopped finally
1/2 Jalapeno chopped
1/4 med green pepper chopped
1 can 25% less sodium cream of mushroom soup
1/2 can white wine
Mix soup and wine, then add chopped veggies, remove 1/2 cup mixture. Mix in sliced potatoes. Pour into pan (spray first with non stick spray). Coat Chicken with left over mixture then place on top of potatoes and bake 400 degrees for one hour. Check if chicken needs to cook longer bake for another 10 minutes. Serve with steamed broccoli and white wine. Enjoy!
