Summer fun

It's that time of year again! No I'm not talking concerts, however we really did have a great time at Sheryl Crow last week. And we will be going to Melissa Etheridge in a few days, and you will hear about our concert fun off and on during the summer, after all we are concert 'ho's'.

But I'm talking summer fun in the back yard. So you don't want to BBQ, but you have friends coming over. Well I have a great chicken taco recipe for you, it cooks all afternoon in the crock-pot and then it's ready and you just have to have taco trimmings along with taco shells, hard and/or soft tortilla's.

Chicken Tacos 10 servings (Sorry I don't have a calorie count, but it's not high)
1 chicken fryer precooked and pulled off the bone, then shredded
1 can red kidney beans, drained
1 can diced jalapeno's
1 onion chopped
1 jalapeno chopped
2 cloves garlic chopped
2 can diced chili tomatoes (drained)
Add Taco Seasoning (grind until powder in mestel and mortar)
1 tablespoon chili powder
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp crushed red pepper flakes 
1/4 tsp oregano
1/2 tsp paprika
1 1/2 tsp ground cumin
1 tsp sea salt
1 tsp black pepper
Mix everything together in crock-pot and cook for 4-6 hours on medium/low or 2-4 hours on high.

Have cheese and shredded lettuce for those who want it, but it's great without. Of course, we have to have hot sauce, but again it's great without it.

And to go with it, try a refreshing summer spritzer.
Champagne Spritzer
Mix together in a large pitcher*
1 large bottle dry champagne or sparking wine
2 cups lemon lime soda

In champagne flutes or tumblers place one or two large strawberries halved and fresh mint leaves. Pour champagne and soda over the top and serve.

*Lean to the side and let the champagne and soda slide in so it doesn't fizz over.
