Scampi Alla Diavola
It's been a while since I've posted a recipe. That's because I never have time to experiment. This weekend I had the opportunity to plan a wine dish for a dinner party. I had a great time. And either everyone lied or my Scampi was a hit. So here is how I made it.
Scampi Alla Diavola
1 lb Raw Shrimp - peel and remove tails
3 cloves Garlic finely chopped
5 tomatoes -- seeded and chopped
1/4 onion finely chopped
1/2 can (14.5 oz) Diced tomatoes w/zesty green chilis
1 jalapeno finely chopped (optional--I know not Italian, but if you like it hot...)
1 tbsp olive oil
2 tsp basil
1/4 tsp pepper
1/4 tsp salt.
18 oz home made Fettuccine (You can find this at an Italian specialty store)
In a crock-pot or pot slow cook all ingredients except shrimp and Fettuccine.
After 3 to 4 hours cooking on high turned to low and add peeled shrimp. Cook until pink.
Cook Fettuccine until almost done, drain and then put back in pan and toss with the sauce.
Serve with Asiago cheese grated over the top.
An Italian Barbera D'Asti pairs with this dish.
