March is for the Irish!

Anyone who knows me, knows that I am a wannabe Irish person! So March is Irish recipe month.

My version of:
Irish Boiled Potatoes  Serving 3-4 small potatoes
8-10 small red Potatoes
1 can Chicken Broth 98% fat free
1/4 cup Onions Chopped
1/4 cup Green Bell pepper Chopped
1/4 cup Red Bell pepper Chopped
1/4 cup Chopped mushrooms
2 cloves garlic chopped
1/4 tsp Dill
1/4 tsp Pepper
1/2 tsp Rosemary
1/2 tsp Chives
1/2 tsp Savory
1/2 tsp Tarragon

Wash and scrub potatoes and place in bowl. Add vegetables and pour in broth. Grind together spices and then add and stir. Place in refrigerator for 2-3 hours. Pour into sauce pan and boil until tender and serve.

Serving 316 Calories, Fat 1g, Sodium 237mg, Carbohydrate 70g, Dietary Fiber 8g, Sugars 5g, Protein 10g.

St. Patrick's Day. The only day in the whole year I don't admit to being part Irish. Why bother? there's enough wannabe's out there.

Are you referring to 'Moi' as a wannabe? Okay I confess, as I did in the post. Actually, I believe I was Irish in another life.
