Today I have a new Chicken recipe. Yeah we eat a lot of chicken around her. It's cheap, what can I say. And there is only so much you can do with a chop or a steak. Anyway I think I'm starting to figure out that I don't have to use all the spices in my cupboard on on everything, that it's okay to only use one or two.
12 oz. pkg. Corn (frozen)
3 med potatoes cubed
1/2 cup sliced carrots
1 stalk celery sliced
8 oz. Chicken - Cubed and browned.
1/2 cup onions chopped
4 tbsp. Butter
1/2 Jalapeño Chopped
1/2 cup shredded Cheese
1 quart half and half (fat free)
1/2 tsp Tarragon
1/2 tsp salt
1/2 tsp pepper
1 tsp Savory
Add vegetables, cheese and half and half to Crockpot. Brown chicken lightly in butter, then pour into crock pot and stir. Grind spices to a powder and stir in. Cook on high for 2 or 3 hours, then turn to low for another 2 hours. If you'd like it a little thicker you can remove some of the liquid, mix until smooth with a table spoon of cornstarch then stir back in, about 45 minutes prior to serving.
1 1/2 cup serving. 323 Calories, Fat 10g, Saturated Fat 6g, cholesterol 47mg, Sodium 273mg, Total Carbohydrate 39g, Dietary Fiber 3g, Sugars 13g, Protein 18g. Vitamin A 54%, Vitamin C 27%, Calcium 28% and Iron 6%.
