Heres 1 of mine 7 layer cookies

7 Layer Cookies

1 stick of margarine
2 cups graham cracker crumbs
1 12 ounce pkg chocolate chips
1 12 ounce pkg butterscotch chips
1 cup coconut
1 cup pecans broken up
1 can sweetened condensed milk


Preheat oven to 350 degrees place margarine on cookie sheet and let melt
Take out add graham cracker crumbs press down to form crust.
Then add choc chips butterscotch chips the ncoconut and pecans.
Pour sweetened condensed milk over top
Bake 25 to 30 minutes
Allow to cool cut into bars

Heres another great one

Chocolate Torte

1 Butter recipe chocolate cake baked as directed for 2 8 inch layers
Allow cake to cool
Slice in half sideways with thread
Take a 16 ounce container of Cool Whip and add a 7 or 8 ounce bar of Hersheys Chocolate
chopped up
Fold Chocolate bar into whipped topping
Spread on each layer
Then top with remaining Chocolate Cool Whip Mixture
You can add alittle more chocolate to the top of the cake
Allow to chill several hours
Serve
Keep leftover cake refridgerated

I can tell this is going to be a hard contest to judge. Everything looks lovely. My daughters and I are going to try these before we decide who wins, I'm going to gain 20 lbs!

McCoy Pie

2 1/2 cups of sugar
add Hershey cocoa to looks.
9 tablespoons of flour
3 eggs
heaping tablespoon of butter
1 teaspoon of vanilla flavoring
3 cups of milk
Mix sugar and cocoa, add flour.
mix good. Add eggs and milk. Cook until starts to boil. Remove from heat and add butter and vanilla flavoring. Mix until all lumps are gone.

Pie crust
Pre-cook 2 deep dish pie crust before you put in filling.

This pie is to die for.

SEAFOOD CANAPES
1 cup sour cream
4 ounces cream cheese
1-4oz. tin shrimp
1 envelope 7 Vegetable 'Lipton' Recipe Mix
24 mini tart shells

Blend the sour cream and cream cheese and mix well. Add the shrimp and 7 Vegetable mix and blend.

Spoon the mixture into tart shells and bake at 375 degrees for 18-20 minutes. Enjoy!

Here's an easy one:

1 pkg. cream cheese
1 small can either shrimp or crab
onion flakes to taste or chopped onion
milk or sour cream if you like it creamier

mix all of the above and then top with cocktail sauce

to jazz it up you could top with chopped green pepper.

Mum's What Have I got In the Cupboard Balls :-)

350g choc bits (you can use cooking chocolate, but I prefer to break good choc into small pieces (you can also use crushed tim tams)

add a small can of sweetened condensed milk and microwave on high for 2 minutes, then stir into a nice chocolaty sauce and try to keep the kid's fingers out. Note: this is near impossible

Mix in whatever you have. I use a handful of shredded coconut, a handful of crushed walnuts, and 3 handfuls of crushed weetbix(a type of shredded wheat breakfast cereal), but you can use any small bits of nuts, dried fruit, and crushed cookie.

While still warm and malleable, roll into balls or logs, then either roll in cocoa powder, or icing sugar, or din half in melted white chocolate.

You can make them look like little puddings by drizzling white choc on a ball's top and using red and green glaced cherry pieces cut to look like holly. Yummy.

Must add my mother's recipe to this list. She made it every year at Christmas and I still make it today - after 33 years of marriage.

Fran’s Cucumber and Onion Salad

Peel & thinly slice 6 cucumbers and one large red or Vidalia onion into a large bowl or glass jar with a tight lid.

Put 1 cup water, 1/2 cup apple cider vinegar, 2 Tbs sugar, 1/2 tsp celery seed, 1 tsp mustard seed, 1 tsp of chopped parsley, plus salt and pepper to taste, in a container with a tight lid. Shake thoroughly and pour over sliced cucumbers and onions. Chill thoroughly, stirring occasionally.

When I have friends and family drop by a few days before the big holiday meal I always prepare this simple and easy dish. Serve with a salad and rolls and you have time left to visit.
Place a round steak cut into 4 pieces into a Pyrex baking dish and add 2 cans of Campbell's Golden Mushroom soup and 2 cans of Campbell's French Onion soup. Add 2 cans of water. Cover and bake until meat is tender and serve over rice. Yummy

Need something to make during the busy holiday season for that "last minute" party? This snack is easy to make, delicious to eat, but tastes like you spent a lot of time in the kitchen.

SWIRLED™ Holiday Party Mix


Ingredients:

9 cups oven-toasted corn cereal squares

4 cups popped popcorn
1 1/2 cups dry-roasted peanuts
1 cup packed light brown sugar
1/2 cup (1 stick) butter or margarine
1/2 cup light corn syrup
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1 2/3 cups (10-oz. Pkg.) NESTLÉ® TOLL HOUSE® SWIRLED™ Holiday Morsels
1 pkg. (7.5 oz.) milk chocolate-covered pretzels
Directions:
PREHEAT oven to 250° F. Grease large roasting pan.

MIX cereal, popped popcorn and peanuts in large bowl. Pour into prepared pan.

COMBINE brown sugar, butter and corn syrup in medium, heavy-duty saucepan. Bring to a boil over medium heat, stirring constantly. Boil, without stirring, for 5 minutes. Remove from heat; stir in vanilla extract and baking soda. Pour evenly over cereal mixture; stir to coat evenly.

BAKE for 45 minutes, stirring every 15 minutes. Cool completely in pan, stirring frequently to break apart mixture. Stir in morsels and pretzels. Store in airtight container.

Estimated Times:
Preparation - 30 min | Cooking - 45 min | Yields - 10 servings (2 cups each

Baked Tilapia

3 Tablespoons Lemon Juice
1 Tablespoons Finely chopped Fresh Parsley leaves
1/4 C. Olive oil
1 Yellow Squash - Cut into 2" strips
1 Zucchini - Cut into 2" Strips
1/3 C. diced tomatoes

6 tilapia fillets seasoned with lemon herb seasoning
Place Tilapia in a baking dish and surround it with the veggies.
Bake for 20 minutes, 350.

Chicken Stew

2 lb. skinless chicken
1/2 onion chopped
2 potatoes sliced and peeled
1 clove garlic mined
1/4 c. lemon juice
2 C. cup peas
1 lb. can diced tomatoes
1 Tbsp. Olive Oil
Saute onions and garlic in olive oil
Add remaining ingredients.
Simmer for 1 hour.

Squash Casserole

1 Tbsp. Olive Oil
1 chopped onion
1 clove garlic crushed
1 lb. can tomatoes chopped
2 c. rice
1/3 c. basil leaves
7 oz. feta cheese crumbled
1 large spaghetti squash cooked and spaghetti strands removed

Saute onion and garlic, add remaining ingredients in casserole dish, top with feta cheese and bake 15 minutes at 350.

Wow I have a hard choice coming up for these recipes. My girls are helping me try them out. And everything has been wonderful so far. The 22nd is almost here, then I will need to make my decision. I will announce the winner on the 26th of December.
