Happy Friday! How are my favorite readers today?
My April has been busy so far. The weather is crazy, we were having record breaking high temperatures. I had been worried about snow in July. No need, it's snowing today. I'm ready for tulips and sunflowers, not snowmen!
Our papa and nana night this month, will be Greek food. I tried my recipe out for traditional Greek Gyro's and it turned out awesome. We'll have a Greek salad and some Greek sides to go with it. I had a few Greek pita breads left over so I did something with them. See recipe below!
Tonight is book club at a corner bar. The book pick was The Paper Palace by Miranda Cowley Heller. I am almost finished. I did not like the characters. It's been a real struggle to read.
We have started watching two new shows. The Hunting Party, 1st season on Netflix, 2nd on Hulu. Then Wild Cards on Amazon. We like them both.
Now find a place you can curl up with a good book, grab a cup of hot cocoa, a glass of wine, or whatever your preference is, and enjoy!

Fish Gyro's and Rice
Directions:
Grate the cucumber into a bowl, press and drain. Add the yogurt, mayo, and chili paste. You can replace the paste with the hot sauce of your choice if desired. Stir in the oil and lemon juice along with the dill and garlic, mix thoroughly and place in the fridge.
Prepare the toppings and store in fridge.
Heat the oven to 400 degrees.
Place oil in skillet. Set heat to med/high. Place fish in and flip over a couple of times to coat in oil. Add lemon juice and seasonings. Cook until flakey.
Place the pita's on the oven rack for 2 minutes right before serving. Then place the fish on the pita, your choice of the fixin's and drizzle the sauce over it.
Enjoy. It pairs well with a prosecco.
Rice
3/4 cup of Jasmine rice and soak for 10 minutes. In the sauce pan heat some oil and then place the soaked rice in and stir for a while until heated on med/high. Add 1 1/2 cups water turn to high and add can of spicy diced tomatoes with juice, bring to a boil. Cover and lower temp to low for 20 minutes. Stir it off and on, you may need to add a little more water.
