Turkey Sweet Potato Soup

I had two guest authors, or this would have been posted right after Thanksgiving. How are your holiday's going? Are you sick of Turkey yet? Or are you going to have a big turkey for dinner again during the winter? Well here is a good soup recipe for some leftovers.

Turkey Sweet Potato Soup 10 - 1 cup servings

2 cns (14 oz) Chicken Broth--low sodium
14 oz White Wine (I just filled the can)
2 cups cubed Turkey --Mix of white and dark meat
1 Med Sweet Potato cut into cubes
1/2 cup cubed carrots
1/2 cup sliced celery
1 big clove garlic minced
1/2 cup chopped onion
2 tsp fresh sage minced
1 tsp basil
1/4 tsp pepper
1/4 tsp sea salt
Mix all together in crock pot on high for 4-5 hours. Potatoes should be tender. Enjoy with a glass of Riesling and a roll.  Per serving: 104 Calories, Total Fat 2g, Cholesterol 21mg, Sodium 376mg, Carbohydrate 6g, Dietary Fiber 1g, Sugars 2g, Protein 9g. Vitamin A 70%, Vitamin C 6%, Calcium 2%, and Iron 4%
