Cajun Sausage and Zucchini Soup

Cajun Sausage and Zucchini Soup 8.75 - 2 cup servings
4 Aidells Cajun Style Andouille Sausage/Sliced
2 Med. Zucchini - one yellow and one green (4 cups cubed)
1 cup diced onion
2 cups diced tomatoes
3 cans 14 oz Fat Free Low Sodium Chicken Broth
2 tbsp Cajun Spice
3 cloves garlic chopped
1/8 cup chopped Jalapeno's
1 1/2 cups white wine
1 cup uncooked minute rice

Brown sausage. Add onion, garlic and peppers and saute until tender. Add Broth and wine and bring to a boil. Add Zucchini and stir in spices turn to medium add tomatoes and cook for 20 minutes. Add uncooked rice, bring to boil again, once boiling turn to medium again and let cook 10 minutes.

Serve with rolls and white wine (Reisling pairs well)

I must say this is my favorite recipe to date. It's good and low calorie, what's not to like?
