Spring BBQ Recipe Blog Contest


It’s time to get the grills out and have some parties. What are you going to do for recipes?

During the month of April post your best BBQ recipes. On May 1st I will draw a name to win a Williams-Sonoma Picnics and tailgates recipe book. So the more entries the more chances you have to win!

Grilled chicken tenderloin

1 lb chicken breast tenderloin
1/2 cup italian dressing (drain spices and discard spices)
1 tsb fresh lime juice
1 1/2 tsp honey

Mix dressing, lime juice and honey together. Pour over chicken tenders, making sure all the tenders are covered, marinate for 1 hour. Braise tenders in a non stick pan or grill to lightly golden in color but not dry.

This is a fav of the kids. Its also good on a salad.

We love putting sliced potatoes, chopped onions and some butter and salt and pepper in tin foil packets and doing them on the BBQ. Sometimes we add very thinly sliced carrots so they cook.
When some of the potatoes get crispy we are so happy.

Hello Mary,

Great contest. I am always looking for new recipe's :-) I love BBQ Ribs so here is one I thought I would share.

BBQ SPARE RIBS

4 lbs. pork spare ribs
Cumin powder
Cumin seed
Mustard seed
Chili powder
Celery salt
Garlic salt
Brown sugar
Liquid smoke

SAUCE:

2 tbsp. brown sugar
2 tbsp. soy sauce
2 tbsp. vinegar
1 c. catsup
1 tbsp. Worcestershire sauce
1/2 tsp. chili powder

Place ribs in shallow baking pan. Brush ribs with liquid smoke. Sprinkle lightly with each of the seeds and seasonings. Cover with foil and bake at 325 degrees until almost done. Uncover and pour some of the sauce over the ribs. Bake until done. Serve remaining sauce with ribs at the table.

I am glad you enjoyed that recipe I love ribs :-) Here is the other recipe I was telling you about from my Auntie. I am always making this one when I want a side dish with my BBQ foods. Like hot dogs, hamburgers anything we grill up LoL

HERE IS MY RECIPE FOR TUNA SALAD:

1) TWO CANS OF TUNA-MAKE SURE YOU POUR THE WATER/OIL OFF ALSO MAKE SURE YOU SEPARATE THE CHUNKS INTO FINE PIECES WITH FORK

2)ELBOW MACARONI BOILED (NOT TOO SOFT) LARGE BOX & 1/2(rinse over medium warm water in strainer & let stand for a few minutes)

3)EGGS 6-8 BOILED REMOVE THE YOLK & SMASH WITH A FORK IN SEPARATE BOWL. DICE EGG WHITE IN SMALL PIECES

4) MIX MIRACLE WHIP, MUSTARD, RELISH-(USE ABOUT 2/3 JAR)

5) ONION DICE VERY SMALL (ONE SMALL OR MEDIUM)

6) SEASONINGS ACCENT, ADOBO, GARLIC-not too heavy, PAPRIKA, A TOUCH OF SALT & PEPPER, & OREGANO (what ever you like to use to season your food)

7) MIX EVERYTHING TOGETHER & WALA.

Okay I'm going to add my own recipe good for any BBQ or cocktail party.
O-Hurricane Cocktail (From food & wine magazine)
Ice
3 ounces white rum
1/2 ounce pucker berry Schnapps
1 ounce grenadine
1 1/2 ounces lemon-lime soda
1/2 ounce pineapple juice
1/2 ounce orange juice
1/2 ounce lime juice
1/2 ounce 151 rum
1 orange wedge
1 lime wedge
Fill cocktail shaker with ice. add the white rum, schnapps, grenadine, soda and fruit juices, and shake well. Strain into a hurricane glass or large wine glass over ice and top with the 151 rum. Garnish with the orange and lime wedges.

Grilled Cabbage

One head of cabbage
One stick of butter
1 TBSP Garlic
6 Boullion Cubes

Cut the heart out of the cabbage, stuff with the other three ingredients. Wrap the whole thing in foil and bake on the grill (or in a pit bbq or in an oven) until tender. For variation, try different types of boullion. Beef one time. Chicken another.

I wasn't a cabbage fan until I tried this.

On some foil cut up bananas into chunks and pineapple chunks and add some butter and brown sugar. Seal the foil and put on the BBQ for app. 10 mins.(on a not too hot part). The butter/brown sugar will form a syrup and the fruit will brown somewhat. A great dessert.

All these lovely recipe's yummy how about a BBQ sauce :)

Bourbon Whiskey BBQ Sauce
This is a barbecue sauce recipe using Kentucky bourbon whiskey. For best results, refrigerate for a day or two, allowing the flavors to blend."

Original recipe yield:
4 cups

PREP TIME 15 Min
COOK TIME 30 Min
READY IN 45 Min

INGREDIENTS
3/4 onion, minced
6 cloves garlic, minced
1 cup and 2 tablespoons bourbon whiskey
3/4 teaspoon ground black pepper
2-1/4 teaspoons salt
3 cups ketchup
1/4 cup and 2 tablespoons tomato paste
1/2 cup cider vinegar
3 tablespoons liquid smoke flavoring
1/4 cup and 2 tablespoons Worcestershire sauce
3/4 cup packed brown sugar
1/2 teaspoon hot pepper sauce, or to taste

DIRECTIONS
In a large skillet over medium heat, combine the onion, garlic, and whiskey. Simmer for 10 minutes, or until onion is translucent. Mix in the ground black pepper, salt, ketchup, tomato paste, vinegar, liquid smoke, Worcestershire sauce, brown sugar, and hot pepper sauce.
Bring to a boil. Reduce heat to medium-low, and simmer for 20 minutes. Run sauce through a strainer if you prefer a smooth sauce.

A different kind of burger :-)

Blue Cheese Burgers

Original recipe yield:
12 servings

PREP TIME 15 Min
COOK TIME 10 Min
READY IN 2 Hrs 25 Min

INGREDIENTS
3 pounds lean ground beef
4 ounces blue cheese, crumbled
1/2 cup minced fresh chives
1/4 teaspoon hot pepper sauce
1 teaspoon Worcestershire sauce
1 teaspoon coarsely ground black pepper
1 1/2 teaspoons salt
1 teaspoon dry mustard
12 French rolls or hamburger buns

DIRECTIONS
1.In a large bowl, mix the ground beef, blue cheese, chives, hot pepper sauce, Worcestershire sauce, black pepper, salt, and mustard. Cover, and refrigerate for 2 hours.

2.Preheat grill for high heat. Gently form the burger mixture into about 12 patties.

3.Oil the grill grate. Grill patties 5 minutes per side, or until well done. Serve on rolls.

Skewers
Take metal skewers or wooden ones that have been soaked in water and place meat chunks that have been marinated in your favorite marinate- place chicken chunk, green pepper chunk, chicken, onion chunk, chicken, pineapple chunk, chicken. You can put on whatever you desire. Lay on BBQ and grill whilst turning the skewers around so each side gets done. Serve with a salad and some bubbly.

I am not sure about you all but all this hot food talk is making me hot and thirsty LoL. Here is a few of my favorite cold beverages to keep me cool or just satisfy :)

Creamy Strawberry Smoothie Recipe:

Ready in: < 30 minutes
Serves/Makes: 4

Ingredients:
2 cups strawberries
1 cup ice -- crushed
1/2 cup orange juice
2 tablespoons vanilla pudding mix
1/2 cup powdered milk

Directions:

Combine all ingredients in blender; blend until smooth.

This recipe for Creamy Strawberry Smoothie serves/makes 4

Sweet Summer Strawberry Crush Recipe:

Ready in: < 30 minutes
Serves/Makes: 4

Ingredients:
4 cups strawberries -- hulled and halved
8 tablespoons sugar
2 cups orange juice
4 tablespoons lemon juice
20 ice cubes (optional*)

Directions:

Combine all in a blender and process until smooth.

* If you like a "smoothie" consistency, OMIT the ice.

This recipe for Sweet Summer Strawberry Crush serves/makes 4

We are very easy with our recipes.

We take chicken and par boil it. The melt some butter add paprika to taste and brush on while you finish cooking it on the grill.

Strawberry smoothies sound great, except that it's snowing outside and I'm freezing!

Debra the chicken sounds good, I've never thought to put paprika on it before.

Grilled Tuna Steaks

2 tablespoons lemon juice
Salt and pepper to taste
4 tuna steaks about 1" thick
Lemon wedges for serving


Grill each steak for 5 mins. per side and then turn over. Succulent and juicy.

Potato Wedges
boiled potato wedges with skin on
sour cream
green onion tops chopped fine
shredded cheddar cheese
salsa

Spray a foil pan with Pam; add the potato wedges and sprinkle seasoning salt on; put on the BBQ till nice and hot.
Have each person dish up some wedges and add sour cream, onions, cheese and salsa(or whatever they want). Delicious and enjoy.
*an easy way to go is to use the French Fries that are a thicker cut instead of the potatoes.

Red beans and Rice

Olive Oil
1 Medium onion chopped
1/2 green pepper, chopped
1/2 cup chicken broth
1 14 oz. can chopped tomatoes
1 teaspoon cumin
1/2 teaspoon cayenne
2 cups cooked brown rice
1 16 oz. can red beans, drained and rinsed

In a large pot, saute onion and pepper until softened. Stir in broth, tomaties and spices.
Add rice and beans. Simmer 10 minutes, stirring occasionally.

Savory Frittata

1 bunch kale or spinach
2 tablespoons water
1 tablespoon olive oil
1 onion diced
1 clove garlin, minced
1 red pepper, in bite sized strips
4 eggs
1/4 cup parmesan cheese

Prepare greens by removing stems and chop leaves into bite sized pieces.
In a nonstick ovenproof skillet, heat olive oil, and saute onion and garlic until golden. Add red pepper and saute briefly. Add greens and a splash of water. Cover pan and allow greens to steam until tender, 5-10 mimutes.
Whisk whole eggs and 2 tablespoons water. Add pepper.
Remov lid and pour egg mixture evenly over vegetables. Sprinkle with parmesan cheese. Broil just until eggs are set, 6-8 minutes. remove and cut into wedges and serve with roasted vegetables.

Cod with orange sauce

Olive Oil
1/2 cup orange juice
2 tablespoons honey
1 1/2 lbs. cod fillets
1/2 teaspoon cornstarch
1 orange peeled and sliced in rings

In a bowl mix together orange juice, honey and place fillets in dish, cover with orange juice mixture.
Bake in oven 350 for 10-12 minutes. remove fish to serving plates. Add cornstarch to remaining orange sauce. Cook and stir frequently until thickened. Our over fish and garnish with orange slices.

Salmon Cakes

1 pound cooked salmon or 14 oz. can salmon
2 green onions, finely chopped
2 egg whites
1/2 red pepper, finely diced
1 teaspoon cayenne pepper
1 teaspoon prepared mustard
1/4 cup plus 1 tablespoon whole wheat bread crumbs
1 tablespoon olive oil

Flake salmon and mix with ingredients. Add 1/4 c. of the bread crumbs and mix well.
Form into 4 cakes.
Put oil in pan and bring to medium heat. Add the cakes and cook until outside turns brown - 3 minutes.
Turn over and fry another 2 minutes.

Baked Asparagus

2 1/2 tablespoons olive oil
salt and pepper to taste
1 lb. slender asparagus
1/4 c. freshly grated parmesan
1/2 lemon

Heat oven to 450.
Pour oil into a shallow baking dish,
Add salt and pepper
Add asparagus turning to coat with oil
Bake 15 minutes
Sprinkle parmesan on top
Add lemon juice.

Baked Pineapple

1 20oz can crushed pineapple
(do not drain)
1/2 cup sugar
2 eggs beaten
2 TBSP corn starch
Cinnamon

Mix everything together except cinnamon in a 2qt. casserole dish. Sprinkle top with cinnamon. Cover and bake @ 350 for 45 minutes, uncovered 15 minutes.

This is also great to take covered dish dinners. Always a big hit.

Special Barbequed Salmon FIllet

1 3-4 lb. salmon fillet
1 tsp. black pepper
1 tsp. garlic minced
1 c. onion minced
1/4 c. soy sauce
1/4 c. white wine
2 Tbsp. brown sugar
4 Tbsp. Margarine
4 Tbsp. Olive Oil

Rinse salmon fillet with water and pat dry.
Rub salmon fillet with pepper and 1 tsp. garlic
In a sm all pan on medium heat saute onion with margarine and olive oil until light brown. Add brown sugar, soy sauce and wine. Reduce heat and cook 5 minutes. Pour hot sauce over salmon fillet wrapped in foil and let sit for 30 minutes. Barbeque salmon for 15 minutes.

Marinade your london broil with this for one day and then grill it:

1/2 cup white vinegar
1/2 cup olive oil
3 tablespoons water
1 tablespoon montreal steak seasoning

Bush Pies
Several cans of fruit pie filling
Loaf of sliced white bread
Margarine
Sandwich Irons(purchase at a store such as Home Hardware)
Campfire or BBQ
Hungry people

Open the sandwich maker and place 1 slice of bread buttered side down against maker. Place 2-3 tablespoons pie filling in center of the bread slice. Put another buttered slice over this with buttered side facing up. Close the sandwich maker and lock. Trim the excess bread off the outside of the maker with a knife. Put the maker into the heart source available, turning often. Check every so often and when each side is a nice golden brown it is ready to eat. Apple, cherry and blueberry are among the favorites.
* a fire works the best but a BBQ also works if the other isn't available.

Summer Fruit Sensations
Brianna Martini
Copyright 2007

1 apple sliced into bite sizes
1 orange, peeled and sliced into small pieces
1 whole sweet grapefruit, peeled and sliced into small pieces.
1 cup of strawberries
1 cup of wild berries
1 cup of seedless grapes
1 freshly squeezed lemon**
you may also add your fave liquor this is optional or some grape juice.
1 1/2 tablespoon of sugar

In a large bowl mix all of the above fruits and refrigerate for two hours.
Remove from refrigerator and place on a cookie sheet and freeze overnight. Once this is done, place the frozen fruit in long glasses and serve with your favorite summer juice. Or you may add a spoonful of these delicious frozen fruits on ice creams and fave desserts.

TACO SALAD

SALAD MIX
1 Large Chopped Medium Head of lettuce
1 Medium Chopped Fine Sweet Red Onion
4 Medium Chopped Medium Ripe Tomatoes
1 Medium Can Drained Red Kidney Beans
1 Pound Lean-Browned-Cooled Drained Hamburger
1/3 Pound Grated Cheddar Cheese
1 Medium Bag-Crushed-Doritos Salsa Verde (is best)

DRESSING
1 Cup Mayonnaise
1 Tbl Sugar
2 Tbl Vinegar
1/2 Cup Salsa Sauce
1/2 Cup Medium Hot Taco Sauce
1 Tea Hot Sauce
1/4 Tea Garlic Powder

Combine all salad ingredients. All in a Large pot or bowl. It makes a lot.
Mix dressing. Add Salad just before serving. Doritos is the brand of chips I like best, Salsa Verde Doritos gives the salad a good flavor. I like using the grape tomatoes in the salad in place of chopping a tomato. It makes the salad look good and the grape tomatoes taste good too.

Cherry Yum Yum

3 Cups Gram Cracker Crumbs

1 ½ Cubs margarine – softened not melted

½ Cup Sugar



Mix Crumbs and sugar together mix well.

Add margarine mix well

Set aside.



2 pks Dream Whip

1 Cup Milk



Whip until stiff

Set aside

8 oz. Cream Cheese



Whip cream cheese in another bowl.



Add mixtures together. Mix well.



Press gram cracker mix into bottom of pan.



1 Can Cherry Pie Filling



Pour ½ of mixture into pan.

Top with cherry pie filling.

Pour rest of mixture on top of cherries.

Add gram cracker crumbs to top.

Onions
Slice cooking onions thinly
Cover with the following:
1 cup vinegar
1 cup sugar
1 cup water
Soak for 1 day and then drain thoroughly.
Put on enough salad dressing of choice to moisten. Sprinkle with celery seed and enjoy.
*I love these and they would be good on BBQ'd hamburgers.

Patty's Pasta Salad
1/2 cup fresh broccoli pieces
1/2 cup strips of red, yellow and green peppers
1/4 cup chopped green onion
1/2 cup shredded or chunks of cheddar cheese
2 cups chicken chunks (can use shrimp)
4 cups cooked Rotini
Salt and pepper
Dressing:
250 g Cucumber dressing(bottled
1/2 cup sour cream
3-4 tablespoons lemon juice
pinch of Dill Weed
Mix the dressing ingredients together and pour over mixture above, mix and enjoy.

This is very good.

Corn Bread Casserole

Beat 2 Eggs lightly
Add: 8 oz pkg cornbread mix
8 oz can cream corn
8 oz can kernel corn (drained)
1 cube butter (melted)
1 cup sour cream

Bake at 350 degrees for 35 minutes
Last 15 minutes add grated swiss cheese on top
