Heres 1 of mine 7 layer cookies

7 Layer Cookies

1 stick of margarine
2 cups graham cracker crumbs
1 12 ounce pkg chocolate chips
1 12 ounce pkg butterscotch chips
1 cup coconut
1 cup pecans broken up
1 can sweetened condensed milk


Preheat oven to 350 degrees place margarine on cookie sheet and let melt
Take out add graham cracker crumbs press down to form crust.
Then add choc chips butterscotch chips the ncoconut and pecans.
Pour sweetened condensed milk over top
Bake 25 to 30 minutes
Allow to cool cut into bars

Heres another great one

Chocolate Torte

1 Butter recipe chocolate cake baked as directed for 2 8 inch layers
Allow cake to cool
Slice in half sideways with thread
Take a 16 ounce container of Cool Whip and add a 7 or 8 ounce bar of Hersheys Chocolate
chopped up
Fold Chocolate bar into whipped topping
Spread on each layer
Then top with remaining Chocolate Cool Whip Mixture
You can add alittle more chocolate to the top of the cake
Allow to chill several hours
Serve
Keep leftover cake refridgerated

HERE IS MY RECIPE:

SHRIMP MOLD

1 ENV. UNFLAVORED GELATIN
A LARGE PKG. PHIL.CREAM CHEESE(8oz)
1 can tomato soup
1 cup mayo
4-5 shallots(all white-little green)
3/4 cup chopped celery
1 pound shrimp (boiled and chopped)
salt
tabasco sauce(optional-few drops)

Heat tomato soup. Add cream cheese. Add gelatin that has been dissolved in 1/4 cup of hot water. Simmer this for few minutes then let cool. Add mayo, shallots, celery, salt, tabasco (opt.),and chopped shrimp.Mix together completely and put in a mold dish. Chill for at least 6 hours.Take out just before eating. Serve with favorite snack crackers.

These are called Christmas wreaths

INGREDIENTS
1/2 cup butter
30 large marshmallows
1 1/2 teaspoons green food coloring
1 teaspoon vanilla extract
4 cups cornflakes cereal
2 tablespoons cinnamon red hot candies
DIRECTIONS
Melt butter in a large saucepan over low heat. Add marshmallows, and cook until melted, stirring constantly. Remove from heat, and stir in the food coloring, vanilla, and cornflakes.
Quickly drop heaping tablespoonfuls of the mixture onto waxed paper, and form into a wreath shape with lightly greased fingers. Immediately decorate with red hot candies. Allow to cool to room temperature before removing from waxed paper, and storing in an airtight container.

I can tell this is going to be a hard contest to judge. Everything looks lovely. My daughters and I are going to try these before we decide who wins, I'm going to gain 20 lbs!

McCoy Pie

2 1/2 cups of sugar
add Hershey cocoa to looks.
9 tablespoons of flour
3 eggs
heaping tablespoon of butter
1 teaspoon of vanilla flavoring
3 cups of milk
Mix sugar and cocoa, add flour.
mix good. Add eggs and milk. Cook until starts to boil. Remove from heat and add butter and vanilla flavoring. Mix until all lumps are gone.

Pie crust
Pre-cook 2 deep dish pie crust before you put in filling.

This pie is to die for.

My recipe is easy. buy or make sugar cookie dough.
form into balls and roll in red and green sparkly sugar, or sprinkles.

Quick easy and they shape themselves as they bake.


I also like to add small red and green candies to rice krispies squares.

SEAFOOD CANAPES
1 cup sour cream
4 ounces cream cheese
1-4oz. tin shrimp
1 envelope 7 Vegetable 'Lipton' Recipe Mix
24 mini tart shells

Blend the sour cream and cream cheese and mix well. Add the shrimp and 7 Vegetable mix and blend.

Spoon the mixture into tart shells and bake at 375 degrees for 18-20 minutes. Enjoy!

Chocolate Rum Pie

2 Egg yolks
1 Egg
1/2 pt. Whipping Cream
1 pkg. chocolate chips
2 Egg whites
1 Tsp. dark rum or rum flavoring

Melt choclate chips in double boiler. Beat together two egg yolks, one egg, rum and add to melted chocolate chips. Beat egg whites until stiff. Whip cream. Fold egg whites and whipped cream into chocolate chip mixture. Pour into baked pie shell. Refrigerate a few hours or overnight. Top with more sweetened whipped cream and choclate shavings.

Her is my grandmother's butter cookie recipe.

3/4 c butter
1 c sugar
3 egg yolks
3 c flour (mor if needed)
1/4 tsp salt
1 tsp vamilla
Chill until needed
Set oven to 400 baking time 10 minutes

Cream butter to fluffiness
Combine with sugar
Add egg yolks and vanilla
Sift flour with salt and add to mixture
Knead with hand until firm adding alittle flour in necessary
Place in a greased bowl, cover with waxed paper and place in frige to chill. Then can be molded and cooked

Here's an easy one:

1 pkg. cream cheese
1 small can either shrimp or crab
onion flakes to taste or chopped onion
milk or sour cream if you like it creamier

mix all of the above and then top with cocktail sauce

to jazz it up you could top with chopped green pepper.

Hi Mary!This is one of my favorites, I make it Christmas morning/brunch.

- 1 package (26 oz.) Ore-Ida® Country Style or Southern Style Hash Browns thawed
- 1 1/2 cups cojack or pepperjack cheese, shredded
- 1 (10 1/2 oz.) can condensed cream of chicken soup, undiluted
- 1 cup light or regular sour cream
- 1/2 cup frozen Ore-Ida® Chopped Onions
- 1/3 cup bottled roasted red peppers, drained and diced, or 1 jar (2 oz.) chopped pimientos, drained
- 1/2 teaspoon salt
- 1 cup fresh French or Italian bread crumbs
- 2 tablespoons butter or margarine, melted
(Optional: Cooked diced ham or chicken)

Heat oven to 350°. In a large bowl, combine all ingredients except bread crumbs and butter, (cooked meat if wanted),mixing well. Spread into an ungreased 11 X 7-inch baking dish or 2-quart casserole. Toss bread crumbs with melted butter; arrange over casserole. Bake 30 minutes or until bread crumbs are golden brown and mixture is bubbly. Serves 6.

Mum's What Have I got In the Cupboard Balls :-)

350g choc bits (you can use cooking chocolate, but I prefer to break good choc into small pieces (you can also use crushed tim tams)

add a small can of sweetened condensed milk and microwave on high for 2 minutes, then stir into a nice chocolaty sauce and try to keep the kid's fingers out. Note: this is near impossible

Mix in whatever you have. I use a handful of shredded coconut, a handful of crushed walnuts, and 3 handfuls of crushed weetbix(a type of shredded wheat breakfast cereal), but you can use any small bits of nuts, dried fruit, and crushed cookie.

While still warm and malleable, roll into balls or logs, then either roll in cocoa powder, or icing sugar, or din half in melted white chocolate.

You can make them look like little puddings by drizzling white choc on a ball's top and using red and green glaced cherry pieces cut to look like holly. Yummy.

Must add my mother's recipe to this list. She made it every year at Christmas and I still make it today - after 33 years of marriage.

Fran’s Cucumber and Onion Salad

Peel & thinly slice 6 cucumbers and one large red or Vidalia onion into a large bowl or glass jar with a tight lid.

Put 1 cup water, 1/2 cup apple cider vinegar, 2 Tbs sugar, 1/2 tsp celery seed, 1 tsp mustard seed, 1 tsp of chopped parsley, plus salt and pepper to taste, in a container with a tight lid. Shake thoroughly and pour over sliced cucumbers and onions. Chill thoroughly, stirring occasionally.

This is super easy. My kids loved it. Even wanted it for thier birthday.

DIRT CAKE

Mixture #1
8 oz Cream Cheese
1/2 stick Butter
1 cup Powdered Sugar

Mixture # 2
1 lg. Pkg. InstantVanilla Pudding
3 cups Milk
12 oz. Cool Whip

1 lg. Pkg. Oreo Cookies Crushed

Combine both mixtures together.
In a large bowl - layer Oreos and Mixture - Start with Oreos & end with Oreos.

You would actually make this in a plastic pot and put plastic flowers on top before serving.

Keep in Refrigerator

When I have friends and family drop by a few days before the big holiday meal I always prepare this simple and easy dish. Serve with a salad and rolls and you have time left to visit.
Place a round steak cut into 4 pieces into a Pyrex baking dish and add 2 cans of Campbell's Golden Mushroom soup and 2 cans of Campbell's French Onion soup. Add 2 cans of water. Cover and bake until meat is tender and serve over rice. Yummy

Corn Bread Casserole

Beat 2 Eggs lightly
Add: 8 oz pkg cornbread mix
8 oz can cream corn
8 oz can kernel corn (drained)
1 cube butter (melted)
1 cup sour cream

Bake at 350 degrees for 35 minutes
Last 15 minutes add grated swiss cheese on top

One of my favorite "Holiday" recipes

Kentucky Derby Pie

1 stick of butter
1 cup sugar
1/2 cup flour
2 eggs
1 tsp. vanilla extract
6 oz. chocolate chips
3/4 cup pecans

Melt butter, stir sugar and flour in to butter. Add eggs, one at a time, stirring well. Add vanilla extract, chocolate chips and pecans. Pour into unbaked pie shell. Bake at 325 degrees about 1 hour. Check if done by sticking toothpick in center of pie.

I have also made this with other flavors of chips. The one my kids like best is made with butterscotch chips. I have even made it with several different at one time, the leftovers.

SWIRLED™ Holiday Party Mix


Ingredients:

9 cups oven-toasted corn cereal squares

4 cups popped popcorn
1 1/2 cups dry-roasted peanuts
1 cup packed light brown sugar
1/2 cup (1 stick) butter or margarine
1/2 cup light corn syrup
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1 2/3 cups (10-oz. Pkg.) NESTLÉ® TOLL HOUSE® SWIRLED™ Holiday Morsels
1 pkg. (7.5 oz.) milk chocolate-covered pretzels
Directions:
PREHEAT oven to 250° F. Grease large roasting pan.

MIX cereal, popped popcorn and peanuts in large bowl. Pour into prepared pan.

COMBINE brown sugar, butter and corn syrup in medium, heavy-duty saucepan. Bring to a boil over medium heat, stirring constantly. Boil, without stirring, for 5 minutes. Remove from heat; stir in vanilla extract and baking soda. Pour evenly over cereal mixture; stir to coat evenly.

BAKE for 45 minutes, stirring every 15 minutes. Cool completely in pan, stirring frequently to break apart mixture. Stir in morsels and pretzels. Store in airtight container.

Estimated Times:
Preparation - 30 min | Cooking - 45 min | Yields - 10 servings (2 cups each

Baked Tilapia

3 Tablespoons Lemon Juice
1 Tablespoons Finely chopped Fresh Parsley leaves
1/4 C. Olive oil
1 Yellow Squash - Cut into 2" strips
1 Zucchini - Cut into 2" Strips
1/3 C. diced tomatoes

6 tilapia fillets seasoned with lemon herb seasoning
Place Tilapia in a baking dish and surround it with the veggies.
Bake for 20 minutes, 350.

2 lb. skinless chicken
1/2 onion chopped
2 potatoes sliced and peeled
1 clove garlic mined
1/4 c. lemon juice
2 C. cup peas
1 lb. can diced tomatoes
1 Tbsp. Olive Oil
Saute onions and garlic in olive oil
Add remaining ingredients.
Simmer for 1 hour.

Squash Casserole

1 Tbsp. Olive Oil
1 chopped onion
1 clove garlic crushed
1 lb. can tomatoes chopped
2 c. rice
1/3 c. basil leaves
7 oz. feta cheese crumbled
1 large spaghetti squash cooked and spaghetti strands removed

Saute onion and garlic, add remaining ingredients in casserole dish, top with feta cheese and bake 15 minutes at 350.

Chow Mein Chicken

1 Tablespoon Olive oil
1 small red pepper
1 clove garlic minced
1 plg. sliced mushrooms
1 can cream of mushroom soup
3/4 c. soy sauce
3 c. chunked cooked chicken

Coat 7 x 11 naking dish with non-stick cooking spray

Saute pepper, mushrooms, garlic in skillet,soy sauce. Stir in remaining ingredients. Pour into baking dish and bake uncovered for 25-30 minutes at 350.

Apple Crisp

1 cup rolled oats
1/2 cup brown sugar
4 tablespoons melted butter
1 21 oz. apple pie filling
1/4 teasp. cinnamon

Combine oats, sugar, butter, apple filling, cinnamon and place in a 8 x 8 x 2 baking dish. Bake 350 for 20 minutes.

Cream butter, sugar, egg, milk and then mix in flour. Press into pan and bake for 18-20 minutes at 350.

Potato Latkes

3 potatoes
1/2 onion
1 egg
olive oil
2 tbsp. flour

Using a food processor or grater, grate onion and potatoes, then mix potatoes, onion, egg, flour in a bowl. In a skillet coat with oil and add when necessary. Shape mixture into small patties. Brown until golden. Yummy!

Apple Brownies

2 apples - cored, peeled, chopped
1/2 cup butter
1 cup sugar
1 egg
1 cup flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon

Cream butter, sugar, beat in egg, mix in apples and then dry ingredients. Pour into a 8x8" baking dish and bake for 40 minutes at 350.

Wow I have a hard choice coming up for these recipes. My girls are helping me try them out. And everything has been wonderful so far. The 22nd is almost here, then I will need to make my decision. I will announce the winner on the 26th of December.
